Broiled salmon with steamed zucchini and potatoes
Baked salmon with steamed zucchini and potato. Easy and quick to make can be a dinner planned for a busy day. Low calories, healthy and delicious!
- 1 zucchini
- 1 potato
- 1 salmon fillet
- 1 tbsp olive oil extra vergin
- salt & pepper
- Season the salmon with salt and pepper and broil it in a hot oven for 10 to 15 minutes (depending on size) turning it halfway through the cooking time.
- Wash and pierce the potatoes and wrap them into 1 sheet of kitchen paper towel. Cook in the microwave for 5 minutes at high level. When done pierce them to check consistency in case they need to cook few more minutes. It will depend on the size of the potatoes.
- Cut the zucchini into sticks like in the picture. Put them in a covered bowl with 1 tbs of olive oil and 1 tsp of salt and pepper. Here I used a steam bag, but they are not easy to find at the Supermarket. Cook in the microwave for 10 minutes at high level.
