Created a vegan chocolate chip cookie for a celebrity, and used this chocolate which is vegan approved due to the quality of chocolate used.
I have been using the chocolate for bakery for some time. The delivery package was extremely good and the seller tried their best to protect the item from the heat during the summer. Love it.
Valrhona makes top-notch chocolate and Caraibe is usually my go-to choice for a fudgy chocolate without too much fruit/bright taste notes. However, the chocolate from this seller was not the usual quality. It had a chalky, dry texture and was covered with a thick coating of fat bloom. Indeed the expiration date was only a few months' away. Buyer beware.
The Chocolate is amazing, the manufacturer stated the expiration date is 14 months out from the time the product is made. When I received it from Amazon, it only had approximately 8 1/2 months left. At the high cost and not being a restaurant, I was concerned about me being Able to use all the product before the expiration date ended. I know some chocolates can be stored longer than the expiration date, not sure about this one! Which is the only reason for me not giving it a 5 star rating!
Tempers nicely. If you put a piece in your mouth and let it slowly dissolve, and then do the same thing with a Hershey's chocolate bar the difference is astounding. The valrhona is smooth as silk, and the Hershey's is gritty. This stuff tastes great in everything.
I bake a lot and this is the brand I always use if I can help it. It's costly, but it makes a huge difference especially if chocolate is the star ingredient. I normally get the one with 72% cacao, but that one cost about $120 this time, so I decided to try this one with less cacao and I'm very happy with it. The bag actually last a very long time .
