I used canned mixed vegetables in this recipe specifically prepared for a Russian or rice salad.You can use any fresh vegetables boiled and cut into small cubes.Feel free to experiment with other vegetables like cauliflower, green peas, or edamame beans, but keep in mind that each vegetable has its own cooking time.
