📋Sicilian Potato Salad with parsley and olive oil
This is a very simple Sicilian potato salad with parsley, olive oil, garlic and lemon juice, no mayo. It can be used as a side dish for many mains. It is particularly good with fresh seafood and seafood platters as it is flavored with parsley, garlic, and lemon.

Make the Italian dressing Chop the parsley and the garlic
4 cloves peeled garlic cloves, 1 sprig freshly chopped parsley
Mix all the ingredients for the seasoning with lemon juice and extra virgin olive oil. Let it rest for at least 1 hour

Prepare the potatoes Wash the potatoes and season with salt
1.5 lb baby potatoes, salt
Cook covered in the microwave at medium heat for 10 minutes or boil for 15 minutes
Finish the salad Cut the potatoes in half once they are cold
Add the chopped red onion

Season with the Italian dressing but remove the garlic
Stir and serve. Best if it rest for a hour so the potatoes absorb the flavors
if you use baby potatoes you don't need to peel them
If you are using larges new potatoes, peel them after they are cooked
If you are boiling the potatoes let them boil for 14 minutes the baby potatoes and 20 minutes the large potatoes.
To find out when the potatoes are ready you can pierce them with a knife and if it goes through without any problem, they are ready.
