This is a very simple Sicilian potato salad with parsley, olive oil, garlic and lemon juice, no mayo. It can be used as a side dish for many mains. It is particularly good with fresh seafood, seafood platters or a barbecue as it is flavored with parsley, garlic, and lemon.

This boiled potato salad is very simple to prepare and it is made with all fresh ingredients typical of a Mediterranean diet.
It can be prepared hours before and let the flavor marinate before serving it. The perfect make ahead side dish for a Summer dinner party.
Sometime I serve it as a starter adding a fresh homemade boiled octopus: warm octopus salad with potatoes.
You can also add some green beans marinated in the same Italian extra virgin olive oil dressing with parsley.

What potatoes to use
In this recipe, I use baby potatoes but you can use any potatoes for salad as long as they remain firm. When I use baby potatoes I don't usually peel them as the skin has many healthy nutrients.
If I use larger new potatoes I prefer to peel them so the flavored olive oil can penetrate in the large chunks of potatoes.
However, I always peel the potatoes after I boil them. Potatoes get too watering if boiled already peeled without the protection of their skin.
Ingredients for the Italian dressing
The Italian dressing for the potatoes is very simple, made with only fresh ingredients:
- Extra virgin olive oil: it is very important to choose a good quality of olive oil as the simplicity of this salad relies on the good quality of the dressing
- Fresh lemon juice: use freshly squeezed lemon juice. Some people use vinegar but I found it too strong. I prefer the milder acidity of the lemon juice.
- Garlic: I use only 1 garlic clove as I let the dressing marinate for few hours then remove the garlic. For a stronger garlic flavor you can add more cloves.
- Raw red onion: only use red onions as they have a sweet taste even when raw. The regular onions are too strong to be used raw.
- Salt and pepper
Different ways to cook the potatoes
I find the microwave perfect for cooking potatoes as it is done in only 10 minutes instead of the 20 minutes required when boiling. Also, the potato will remain firmer, which I like.
I cook the baby potatoes at medium heat for 10 minutes.
For larger potatoes, I pierce them with a knife, cover with kitchen paper and cook them at high heat for 10 minutes.
Sometimes I also use the pressure cooker to steam the potatoes as I have a pressure cooker with a steam basket. If you want to know more about the pressure cooker I use you can read about it here.
If you don't have a microwave or a steamer you can simply boil the baby potatoes for 15 minutes, and the regular potatoes for 20 minutes.
To find out when the potatoes are ready you can pierce them with a knife and if it goes through without any problem, they are ready.
How to cook the potatoes in the Microwave
- Wash the baby potatoes and season with salt
- Cook covered in the microwave at medium heat for 10 minutes
The Italian dressing
- Chop the parsley and the garlic
- Mix all the ingredients with the extra virgin olive oil and fresh lemon juice.
- Let it rest for at least 1 hour
Preparing the Italian potato salad
- Cut the potatoes in half once they are cold
- Add the chopped red onion
- Season with the Italian dressing but remove the garlic
- Stir
What can you serve it with
This potato salad is very versatile and can be served with any barbecued meat for example. But the best combination for this salad is fresh seafood.

- 1.5 lb baby potatoes
- ½ red onion
- ¼ cup extra virgin olive oil
- ½ lemon juice
- 4 cloves peeled garlic cloves
- 1 sprig freshly chopped parsley
- salt

Instructions
Make the Italian dressing
- Chop the parsley and the garlic4 cloves peeled garlic cloves, 1 sprig freshly chopped parsley
- Mix all the ingredients for the seasoning with lemon juice and extra virgin olive oil. Let it rest for at least 1 hour¼ cup extra virgin olive oil, ½ lemon juice
Prepare the potatoes
- Wash the potatoes and season with salt1.5 lb baby potatoes, salt
- Cook covered in the microwave at medium heat for 10 minutes or boil for 15 minutes
Finish the salad
- Cut the potatoes in half once they are cold
- Add the chopped red onion½ red onion
- Season with the Italian dressing but remove the garlic
- Stir and serve. Best if it rest for a hour so the potatoes absorb the flavors

Notes
- if you use baby potatoes you don't need to peel them
- If you are using larges new potatoes, peel them after they are cooked
- If you are boiling the potatoes let them boil for 14 minutes the baby potatoes and 20 minutes the large potatoes.
- To find out when the potatoes are ready you can pierce them with a knife and if it goes through without any problem, they are ready.

Hello Diane, it is half lemon. I would have specified if it was a cup. I corrected the sprig, it was supposed to be parsley, not sure why it was replaced by the garlic. It must have been a glitch in the recipe card template.
