Healthy Leftover Chicken Salad Wraps

A healthy salad

I often have a boiled chicken to use, as I make a lot of homemade stock especially during winter.

With time I have experimented with several recipes and you can check the article Reviving a boiled chicken. These chicken wraps are my favorite.

Not only they are light and healthy, but also delicious and every time I make them I eat at least two.

In this recipe, I used red cabbage as I love the purple color, but generally I use any salad I have in the fridge.

For the boys, I season them with mayonnaise but if I want a light salad dressing I use Greek yogurt or even homemade Kefir, which I make every day for breakfast.

I always add an apple to the salad as it adds a fresh bite to the otherwise bland chicken. The grated Parmesan adds a nice nutty flavor to it.

Homemade wraps

To make it easy, you can roll this chicken salad into a commercial wrap.

If you want to make something special I recommend making these homemade wraps, they are just ideal for this salad.

While the store-bought wraps are soft and smooth, those homemade wraps are warm, fresh, and have a delicious flavor of toasted bread. They bend easily but remain crunchy.

They are very simple to make and have zero fat, it is just flour mixed with lukewarm water, toasted on a hot cast iron pan with no added butter nor oil.

Making the wraps

The dough for the wraps needs to rest for 30 minutes so it is best to start by making the dough and while the dough is resting you can prepare the salad.

  1. Combine the flour and the water adding the water gradually until the dough reaches a consistency similar to the pasta dough. Or use an electric mixer.
  2. Mix for 8 minutes until the dough is homogenous and elastic.
  3. Cover with flour and a wet towel and let it rest for 30 minutes.

Preparing the salad

  1. Debone the boiled chicken
  2. In a small bowl combine the mayonnaise or the Greek yogurt with the mustard
  1. In a large bowl mix together the red cabbage, the carrot the apple and the chicken
  2. Season with salt
  3. Mix in the dressing
  4. Add the parmesan and stir

Cooking the wraps

Once the dough has rested you can make the wraps:

  1. Cut the dough into 6/8 small balls (double dose in the picture).
  2. One by one, roll them flat in a floured surface
  3. Stretch them by slapping them with your hand back and forth until they reach 7 in - 18 cm of diameter.
  4. Heat up a heavy cast iron pan
  5. Grill (no fat needed) the flatbread, quickly turning it on the other side before it burns.
  6. Pile them one on top of the other

Prepare the wraps

  1. Lay the wraps on a plate or cutting board
  2. Fill it with the chicken salad in the center and roll the 2 side on top
  3. With a toothpick block the two sides together
  4. Serve !

More options

You can make those wraps with any other leftover meat, especially barbecued meat. You can use Brazilian picanha, bbq chicken breast, roasted chicken.

You can make a chicken Caesar salad and wrap it in those flatbreads. Why don't you try to make homemade Mayonnaise from scratch? It is very easy.

Serve Indian bread with salad

Try those wraps with Thanksgiving leftover turkey or ham. Pulled pork is also great wrapped in homemade flatbread and with a nice fresh coleslaw salad.

As a side dish, you can serve the baked potatoes microwave and oven, they are ready in 30 minutes. A perfect healthy replacement to french fries.

Ingredients
 

For the chicken salad

  • 1 boiled chicken
  • ¼ red cabbage
  • 2 grated carrots
  • 1 apples
  • 1 cup mayonnaise or greek yougurt
  • 1 tablespoon Dijon mustard
  • salt & pepper
  • ½ cup freshly grated Parmesan

For the wraps

  • 1 ¾ cup flour
  • ⅔ cup lukewarm water
  • 1 teaspoon salt

Instructions
 

Prepare the dough for the wraps

  • Season with salt and mix in the dressing

Make the wraps

  • Cut the dough into 6 small balls.
  • One by one, roll them flat on a floured surface and stretch them by slapping them with your hand back and forth until they reach 7 in - 18 cm of diameter.
  • Heat up a heavy cast iron pan and grill (no fat needed) the flat bread quickly turning it on the other side before it burns.

Fill the wraps

  • Lay the wraps on a plate or cutting board
  • Fill it with the chicken salad in the center and roll the 2 sides on top
  • With a toothpick block the two sides together
  • Serve !

Notes

  • You can prepare the wraps' dough even hours before, but it is better to cover it with cling film so the surface doesn't harden 
  • You can substitute the red cabbage with a regular cabbage or with Romain lettuce. I like the purple effect of the red cabbage
  • For a low-fat diet, you can substitute mayonnaise with Greek yogurt for a lighter seasoning
  • If you don't have a boiled chicken you can use grilled chicken or roasted chicken. 
  • You can also use other leftover meat like beef, lamb or pork. Barbecue meat is very good served in those wraps
  • If you don't have time to make homemade wraps you can use store-bought ones
