These chicken spiedini are easy and healthy, with no fat added. They are simply marinated with lemon zest and served with a low-fat yogurt sauce Tzatziki. Perfect for the starting of the barbecue season, when when you want to keep your weight under control. If you don't have a BBQ, you can cook these chicken spiedini in the oven.

Spiedini is the Italian name for skewers, and it is a perfect way to cook chicken breast on the barbecue or grill.
Since the chicken breast is thick on one side and small on the other, it tends to cook unevenly.
To ensure the middle is not raw, the chicken must cook for a long time. However, cooking it for too long can result in a dry and tough piece of meat.
Barbeque chicken spiedini are the perfect solution to the problem. The meat is cut in stripes and uniformly arranged on the skewers. It cooks evenly on all sides.
It doesn't need complicated marinades; a simple seasoning of salt, pepper, and lemon zest is enough to bring out the delicate flavor of the chicken.
Add chopped peppers and/or onions between the chicken stripes on the skewers to make a delicious light kebab.
Preparing the chicken breast for the bbq
- Cut 5 chicken breasts in stripes
- Put them in skewers
- Season with salt, pepper and lemon zest on both sides
- Cook over a charcoal barbecue
Top tip
- Cut the chicken breast into strips and put them on the skewers keeping them uniform and even.
- Once seasoned, cook the chicken spiedini on the barbecue, turning them regularly to ensure they don't burn.
- Once they are ready, put them aside and let them rest covered for a few minutes, so the moisture is kept inside the meat.
Chicken spiedini in the oven
If you don't have a charcoal barbecue, no problem. You can make these chicken skewers in the oven or on the grill.
- Prepare the chicken the same way as above
- Place the spiedini over parchment paper
- Cook in a hot oven at 390F - 200 C for 20 minutes on one side
- Turning the skewers for 10 minutes on the other side
Serving them with a low-fat yogurt sauce
This yogurt sauce (Tzatziki) is perfect for a barbecue chicken breast, it is fresh, creamy and moist but very limited fat because I use low-fat Greek yogurt. The sauce is packed with herbs like mint parsley and grated cucumber, full of flavor and light.
Making the yogurt sauce
- Peel and grate the cucumber
- Squeeze the water out
- Add the chopped parsley, mint and cumin
- Squeeze 1 lemon juice
- Add the yoghurt
- Season with salt and pepper
Side dishes for BBQ chicken
This main dish is perfect for a barbecue party and can be served with fresh side dishes like Tabbouleh or black rice with apple carrot and avocado as in the picture below.
If you want to serve more veggies, the grilled zucchini, eggplants and peppers salad is a perfect side. You can also serve it with a Greek salad.
For potato chips you can make these easy baked potatoes microwave oven.
For a fun way to serve this BBQ chicken spiedini you can make homemade wraps and and serve it with roman lettuce and yogurt sauce.

- 9 oz light Greek yogurt 4 yogurts cups
- 1 cucumber
- ½ cup freshly chopped parsley
- ½ cup chopped mint leaves
- 1 teaspoon cumin
- 1 lemon juice
- salt
- black pepper

Instructions
Make the chicken
- Cut 5 chicken breasts in stripes5 chicken breast

Tips for making the best bbq chicken breast
- I want to keep the meat nice and lean and cut down on extra unnecessary calories, so I only season with salt, pepper and lemon zest.
- I cut the breast into strips and put them in the skewers to keep them uniform and even.
