What is black rice

Black rice is a type of rice originally from Asia and originally was exclusively served to the Emperor. This is why it is also called forbidden rice.

Because it is rich in protein is a perfect meal for a vegan or for those  (like me ) who are on a diet and need proteins to control the appetite.

Why this black rice recipe works

The combination of the nutty flavour of the black rice with the sweetness of the apple and the carrots is very satisfying. The creaminess of the avocado gives a perfect contrast to the crunchy texture and the acidity of the lemon adds a nice bite to it.

How to cook black rice

The black rice has to boil in salted water for at least 18 to 20 minutes. Its grains are very thick and if you want to make them creamier and softer you can boil it in a pressure cooker for 10 minutes.

How to make this black rice recipe

To make this recipe is very simple:

  1. Boil the brown rice in salted water for 20 minutes. If you are using a pressure pan it should take approximately 10 minutes.
  2. Strain the rice and let it cool
  3. In the meantime peel the carrots and the apples and shred them with a shredder
  4. Cut an avocado in cubes and add to the salad
  5. Mix the rice with the apples and the carrots and season with the virgin olive oil, salt and lemon juice.

  • KitchenAid Mixer
  • Grater
  • All-Clad Sauce Pan 3-Quart
  • Vegetable Peeler

Ingredients
 

  • 2 cup Black rice
  • 1 Apples
  • 3 Carrots
  • 1 avocado
  • 1 non treated lemon
  • 1 tablespoon sea coarser salt
  • 3 tablespoon Olive oil

Instructions
 

  • Boil the brown rice in salted water for 20 minutes. If you are using a pressure pan it should take approximately 10 minutes.

    This is SO simillar to a recipe my Nan used to make for buffets! She always just called it rice salad 🙂 though she made it with white rice. This is such a simple, delicious recipe. Thanks for sharing and reminding me of my childhood! 🙂

    How long does the avocado stay green for? How long can I make in advance? Thank you

      The lemon juice should prevent the avocado to oxidise but I wouldn't recommend making it hours ahead.
