Winter Vegetables

The Mediterranean cuisine is full of vegetables, some common ones and some very specific to the region. The intense sun of the Mediterranean gives fruits and vegetables such an intense flavor that they become the hero of many recipes. There is no need to add sauces or strong condiments, just enough seasoning to enhance their flavor.
