Starchy Vegetables

Potatoes are a staple ingredient in Italian cuisine, used in various dishes to add texture, flavor, and heartiness. One classic potato-based dish is gnocchi, a soft and fluffy pasta made with potatoes, flour, and eggs. Another delicious dish is gateau di patate, a savory potato pie with layers of potatoes, cheese, and sometimes ham or other cured meats. For those with a sweet tooth, Graffe di Carnevale, or potato doughnuts, are a beloved dessert that are often enjoyed during regional celebrations and festivals.
